Combine
2 seeded red serrano chiles; zest of 1 lemon, 1 finely chopped garlic clove, 1 tablespoon olive oil, juice of lemon and a large handful of fresh parsley, finely chopped
in a bowl. Place this under the skin of cornish hens, or baste onto chicken breasts. Preheat grill to medium. Brush grill with olive oil or spray. Cook until cooked through.
